The haematochrome in red pepper was extracted by solvent method,and it was improved by supersonic method to quicken extracting rate which is proved feasibility.

• 本文以辣椒中红色素为提取物,采用传统工艺的溶剂法作为提取手段,并对本方法的浸取过程进行改良,采用超声波方法加快浸取速度,证明了其可行性。
